FOR THE CRUSTED MOZZARELLA

8–9 ounces Buffalo mozzarella

1–2 cups panko breadcrumbs

3/4 cup chopped parsley

Salt and freshly ground black pepper

2–4 tablespoons olive oil, for sautéing
